Acorn Squash and Sweet Potato Soup

From Food Website


Ingredients:

Servings: 6

350 g sweet potatoes
1 acorn squash
4 shallots
1 tablespoon olive oil
6 garlic cloves, unpeeled
3 3/4 cups vegetable broth
1/2 cup light cream
salt
pepper

Directions:

Preheat oven to 375F / 190C.
Cut the sweet potato, squash and shallot in half lengthwise. Brush the cut sides with oil.
Put the vegetables, cut sides down in a shallow roasting pan with the garlic cloves.
Roast in the preheated oven for about 40 minutes until tender and light brown.
When cool, scoop the flesh from the potatoe and squash halves and put in a pan with the shallots. Remove the garlic peel and add the soft insides to the other vegetables.
Add the broth and a pinch of salt.
Bring to just a boil, then reduce the heat and simmer, partially covered, stirring occasionally, until vegetables are very tender (about 30 minutes.).
Let the soup cool slightly, then transfer to a blender and puree until smooth (working in batches if necessary).
Return the soup to the pan and stir in the cream.
Season to taste and simmer for 5-10 minutes until completely heated through.

Mistletoe: The Golden Bough Let us look to ancient Sun worship - particularly that of the Celtic Druids - to understand how mistletoe became an icon of the winter holidays in the northern hemisphere. The Celtic Druids were skilled in herbal medicine and magic, and mistletoe was by far the most sacred of their magical plants. It grew amongst the branches of the sacred trees, seemingly without sustenance. Having no roots, and thus no connection to the Earth, it was considered the sacred plant of the Sun. A tree that hosted a mistletoe plant was marked as particularly sacred by the gods. With its golden color, and habit of growing high off the ground without roots, mistletoe was naturally associated with the Sun. Or, more specifically, it was considered to be the sperm of the solar deity Taranis, and the promise of the sun God’s rebirth. Mistletoe was thought to take on the properties of its host tree, including the tree's essence and power. The most powerful mistletoe grew on the sacred oak. When weather turned cold and leaves dropped from deciduous host trees, the sacred leaves and waxy white berries of mistletoe were revealed. In this was seen a promise of the return of the Sun. During the time of the Winter Solstice, branches would be harvested with great ceremony and used for a variety of medicinal and magical purposes. These purposes included: protection from lightening, curing of poisoning, protection from fire, treatment of epilepsy, protection of livestock from fairy mischief, and protection of babies from witches curses. An old English superstition held that as long as a sprig was retained in the home, so love would be retained. It became popular in some households to insure that a fresh sprig was hung in the household every year. This is probably the origin of the kissing ritual. Apple Cider Mulling Spice Sachets Recipe

Make multiple batches of these individual spice sachets for apple cider. Be sure to add the mulling directions to the gift tag.

Ingredients

Serves: 2

Serving Size: 1 cup

1 stick Cinnamon Sticks , broken in half
2 Cloves, Whole
2 Allspice, Whole
2 cups apple cider
1/4 teaspoon Pure Vanilla Extract

Directions

Place spices in center of a piece of cheesecloth. Tie tightly with long piece of string.

Place spice sachet in small saucepan. Add apple cider. Simmer over medium heat 10 to 15 minutes or until fragrant. Stir in vanilla. Discard spice sachet. Serve warm.

Bacon Wrapped, Cream Cheese Stuffed Chicken Breasts Oh Yeah 1 boneless skinless chicken breast 1 tablespoon green onion, Chopped 2 tablespoons cream cheese 2 pieces bacon, Partially Cooked Directions: Pound out Chicken breast so it is about 1/4" thick. Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast. Roll Chicken breast up to conceal cream cheese. Wrap partially cooked bacon around chicken breast and secure with toothpick. Place on baking sheet and back for about 30 minutes at 375. Broil for about 5 minute to crisp bacon. "Doing That Which is Right"

    A minister waited  in line to have his car filled  with gas just before a long holiday weekend. 
  vThe attendant worked quickly, but there were many  cars ahead of him. Finally, the attendant  motioned him toward a vacant  pump.

   "Reverend," said the young man,  "I'm so sorry about the delay. It seems as if everyone waits until the last minute to  get ready for a long trip."

   The minister chuckled,  "I know what you mean.  It's the same in my  business."

There was a very  gracious lady who was mailing an old family Bible  to her brother in another  part of  the  country.

"Is there anything  breakable in here?"  asked the postal clerk.
  "Only the Ten Commandments." answered the lady.

The Substitute Organist
The minister was preoccupied with thoughts of how he  was going to  ask the congregation to come  up with more money  than they were  expecting for repairs to the church  building. Therefore, he was annoyed to find  that  the regular organist was sick and a substitute had  been brought in at the last  minute. The substitute  wanted to know what  to play.

    "Here's a copy of  the  service," he said impatiently. "But, you'll  have to think of something to play  after I make  the announcement about the finances."

    During  the service, the  minister paused and said, "Brothers and Sisters,  we are in great difficulty; the  roof  repairs cost twice as much as we expected  and  we need $4,000 more. Any of you who  can pledge $100 or more, please stand up."

      At  that moment, the substitute organist played "The  Star Spangled Banner."

      And that is how  the substitute became the regular organist!

Two Large Pots
An elderly Chinese woman had two large pots, each hung on the ends of a pole which she carried across her neck.

One of the pots had a crack in it while the other pot was perfect and always delivered a full portion of water.

At the end of the long walks from the stream to the house, the cracked pot arrived only half full.

For a full two years this went on daily, with the woman bringing home only one and a half pots of water.

Of course, the perfect pot was proud of its accomplishments.
But the poor cracked pot was ashamed of its own imperfection, and miserable that it could only do half of what it had been made to do.
    
  After two years of what it perceived to be bitter failure, it spoke to the woman one day by the stream.

'I am ashamed of myself, because this crack in my side causes water to leak out all the way back to your house.'

The old woman smiled, 'Did you notice that there are flowers on your side of the path, but not on the other pot's side?'
  'That's because I have always known about your flaw,
so I planted flower seeds on your side of the path, and every day while we walk back, you water them.' 
For two years I have been able to pick these beautiful flowers to decorate the table.  

Without you being just the way you are, there would not be this beauty to grace the house.' 

Each of us has our own unique flaw. But it's the cracks and flaws we each have that make our lives together so very interesting and rewarding...  


You've just got to take each person for what they are and look for the good in them. 

SO, to all of my cracked pot friends, have a great day and remember to smell the flowers on your side of the path!

Custom-made in an off-the-rack world...

    I first heard that expression in an episode of the TV show, “Mash.” I believe it was Alan Alda’s character, Hawkeye, who said it to Loretta Switt’s character, “Hot Lips.”
    They were talking about not being able to find love, and Hawkeye said, “Our problem is we want custom-made in an off-the-rack world.”
    The line stuck with me.
    In a world where we are often expected to follow in our parents’ footsteps, or live in a Levitt house, it’s easy enough to fall into line and have a cookie-cutter type life. If that sounds disparaging charlene norton, forgive me, for my intention is not to demean those who lead traditional lives. In fact, I readily admit that the world needs a semblance of order and constancy, the salt of the earth kind of people that keep the gears moving on the planet.
    But we also need the others, those of us who always felt out of step, who never quite fit in, who wondered as children if we’d been adopted even though we shared the same nose with our father and half his family. Well, not the EXACT same nose, we each had our own. We need the misfits, if you will, to add flavor and color to our world.
    Just because Jane does not want what Joan has—does not mean that what Jane wants is superior to what Joan wants and has. It’s not a matter of better than, but different than, or from. I never seem to get that quite right either.
    Many of us who don’t fit into off-the-rack clothes or lives often wish we could for a number of reasons. It would be simpler and more convenient for starters. Mavericks of any variety don’t have an easy time of it. We put such demands on ourselves to forge a new way of doing and being, and struggle, therefore, without realizing why most of the time. We sense something is wrong, something does not mesh; we don’t know what it is, but we are somehow convinced whatever it is—the something wrong is us, or a failing in us.
    It would be grandiose to say that those of us not content with the off-the-rack version of life are the artists of the world, the poets, writers, painters, actors, dancers, cooks, sculptors, teachers, nurturing mothers, saints, etc., but the truth is we come in all shapes and sizes. Our uncommon commonality is that we see life at an angle. We may suffer more than the average person who doesn’t take the time to think things through because they see no need for it, but we also seem to have a greater capacity for joy. It’s an interesting trade off.
    Maybe it’s as straightforward as having an allergy to the madness of mediocrity, or, at least, to the sameness we see in the world, which stuffs up the sinuses of our creativity until we are sure we can’t breathe.
    “They broke the mold when they made him.” People say that about other people who seem to be one-of-a-kinds. The truth is we all are one of a kind in our own way.
    Even cookies made with a cookie cutter are a little different one to the other; we just have to look more closely. And those of us who do buy off-the-rack often add our own flare by removing a belt, or adding a scarf. We each can put our unique brand on things.
    So, perhaps more of us than we might at first suspect are living custom-made rather than off-the-rack lives.

Final Essay for Master of Spirituality

    I may sound too repetitive when I say that I truly enjoy the courses provided by the ULC, but the fact is that I always looking forward in receiving the next lessons. I must say that the Master of Spirituality course has definitely broadened my intellect about the meaning of Spirituality. The knowledge that I have cultivated from each lesson exposed by various philosophers has broadened within me the meaning of Spirituality, thus opening my eyes, ears, mind and heart.
    From my perspective, I found the course to be well presented, educating, and enlightening. I would recommend this course to anyone. I do hope that I would be able to defend Spirituality when I am confronted by scientifically minded individuals.
    What I came to learn in the last couple of years is the willingness to minister to all my brothers and sisters no matter what their faith is or not is and not just associate myself with people who had the same ideals and mind set as mine.
    The feeling or assertiveness that I had was lacking due to prejudice of religions on my part therefore I was not able to recognize that in my mind it could be separated. A person should not rely on a specific faith but must look deeper into his soul and be able to connect intellectually with each individual experiences of every living being. This does not mean that a person ought to forget his faith but must be open to understanding of other faiths.
    When ministering to others, we as ministers must be able to apply self-control and un-bias observations and attempt to learn how they act, how they relate, how they think prior to impose our thoughts to them. Self-control in my judgment means that we do not minister to ourselves, but to aid others. Preaching, proselytizing doesn’t help those that we are ministering, because they could become disengaged and shy thus pushing them away.
    My definition of Spiritualism is the mode of which each individual belief is connected with the spiritual nature of our existence.
    Love, kindness, patient are virtues that are of a prime priority in ministering. Anything short of that will lose the ability of what is needed to accomplish. It is imperative that when we come across a minded driven person(s) or a heart driven person, in my humble opinion the subcategory mentioned in lesson one must be analyzed in order to obtain a clear picture in knowing the difference and apply them in a way that communication remains open by learning their point of view. I hope that as a minister I am able to plant the seed and allow them to discover the true.
    My own philosophy is and has always been that God has indeed created the universe from its birth. Everything good that has and is happening is all God’s gifts. Evil on the other hand is generated by humans. In my opinion science has not fell off the sky and the philosophers decided that they were the inventor of science. Again this was God’s gift to the human race for providing human how to use science. Going back to the lessons, many of the Greeks philosophers who in my judgment were given the gift of mind that is that man can with logic, reason, faith and expression of the mind can eventually come to know what God allows and how much he will allow us to know.
    What has affected me the most is Karl Marx. I do not consider and never did consider him a true philosopher because as we know he was indeed a political idealist in the sense of the word. Indeed it is a materialist philosophy that makes him a true Atheist. His famous quote that religion is “The opium of the masses” was his believe that religion is the tool to enslave the people when in fact Marx “Communism” as far I am concerned was exactly that ”the opium of the masses”.
    My logic behind my statement is that the State wanted utopianism believing that by living a life that “From each according to his ability, to each according to his needs” would have a society of highly and perfect qualities.  Perhaps this went well at the beginning but has time went on this system was so abused not only by their leaders but also by the masses because not everyone was contributing to their system. And beside the people in power did not practice what they preached, therefore lived substantially better than its citizens.
    Perhaps I could understand this system back in the early 1900’s about wealth redistribution so that everyone in society was given equal shares of the benefits derived from labor. All means of production were to be controlled by the state. In reality as we shall see with the fall of communism, this system proved to have its fallacy and indeed it came to a squelching halt.
    If I made any sense which I hope that I did, in the end I would like to say that the course is very insightful and has definitely provided how philosophers have influence religion. I found the entire course to be beneficial. However what struck me the most is the how powerful, captivating and influential the philosophers are in the connecting to today’s world. One reason is because I want to learn more about this connection and the other is because the instructor suggested the purchase of the Republic and the Crito books. Both were purchased and just started reading the Crito. Now I am looking forward to purchase the other valuable non-philosophical book mentioned by him as soon I learn of the title.
    In the mean time I will rack my brains and see if I come to an understanding that when good and evil became one, they are no more.

    A minister parked his car in a no-parking zone in a large city because he was short of time and couldn't find a space with a meter.

    Then he put a note  under the windshield wiper that read: "I have  circled  the block 10 times. If I don't  park here, I'll miss my appointment. Forgive us our trespasses."

  When he returned, he found a  citation from a police officer along with this  note "I've circled this block for 10 years. If I  don't give you a ticket I'll lose my job. Lead  us not into temptation."

    A middle-aged woman had a heart attack and was taken to the hospital. While on the operating table she had a near death experience. Seeing God she asked, "Is my time up?" God said, "No, you have another 40 years, 2 months and 8 days to live." Upon recovery, the woman decided to stay in the hospital and have a facelift, liposuction, and a tummy tuck. She even had someone come in and change her hair colour.
    Since she had so much more time to live, she figured she might as well make the most of it. After her last operation, she was released from the hospital. While crossing the street on her way home, she was killed by an ambulance.
    Arriving in front of God, she demanded, "I thought you said I had another 40 years? Why didn't you pull me from out of the path of the ambulance?" God replied, "I didn't recognize you."

When people say to me, "God bless you," I think to myself that if God were to cut me off at this very moment, I would still die in His debt for how richly he has blessed me. (God, that was just a statement of fact, not a request... :-)). I feel so honored to be a member of this exceptional Food For The Poor family.
It is such a privilege to work every day, arm-in-arm, with thousands of caring, compassionate fellow laborers like you. The love you exemplify in your lives brings life to others. The fact that you bring food, clean water, shelter, education and medicines to those who would die without them is already spectacular, but that's not all that you do. Your generosity brings thousands of suffering people tremendous healing.
You build the self-esteem of those ashamed of their poverty, and bring hope to those on the edge of despair. You make those who feel voiceless, invisible and forgotten, feel acknowledged and remembered by man and by God. You are the balm of Gilead that refreshes their faith, relieves their grief, and comforts their broken spirits.

the work had only begun.
 
A young boy named Tommy
 looked out at his tree, his stockings and toys
"What can I do, to keep this Christmas spirit,
with all of its joys?"
 
At Community Action 
there was still much to be done,
Bringing food and necessities to those
who don't have a ton.
 
Tommy brought his family in
to volunteer
They all explained, "What a great way to 
keep the holiday cheer!"
